Anybody know how to get the horse power up to 300 on the 3.7, like the pickups have?

Depends on what's different. Cams, manifolds, exhaust, intake plumbing... Might be just a computer thing, might be more to it.

Maxboost by JMS. I've been checking online for a couple months and now this maxboost shows up.I need to investigate still. Let me know if you come up with anything. It says its for 3.5 ecoboost.

I bet it would not be hard to get more power out of the 3.7 - give tuners a little time to figure it out. I think the problem is heat - in a van like this there is less ability to shed heat due to the packaging. Detuning the engine allows things to run cooler.
