Use that space between the inner and outer sheet metal

In the un-paneled cargo vans you can see several spaces in the lower wall that are just dying to be utilized. Simply shoving things in there might dent the outer skin, you need to have a contained area. I was looking at mine and remembered the in-wall storage boxes and safes that a lot of companies make.

Once a panel is on the lower wall, you can cut a mounting hole and put one of these in, I think there are a few places where it will fit. Other sizes are available, as well as different types of flush mount storage designed for 2x4 walls.

Looks like it would require at least a 9" by 14" hole with 4" of depth clearance.

Is there a cubby hole that is at least that size?

I believe the one right behind the driver seat is that big. Depth may need to be shimmed out .25". There are other flush mount boxes, including electrical sub panels, so finding some that fit shouldn't be a problem. I might just make some out of 1/4" melamine material.

This site offers numerous safes of the same kind that are more upscale.

I saw those, they are pretty steep in price, but good if you're going to put valuables in them.
